Iyer’s previous book, the eye-opening 660 Curries, impressed us with its adventurous range. Here he addresses a less experienced audience than before, one that is intrigued by Indian flavors but not particularly confident in the kitchen. The word unfolded in the title refers to the book’s seven gatefolds which open to display detailed step-by step full-color photographic lessons on fundamental Indian dishes. Each of these core recipes is followed by a host of variations, some of which are traditional and some of Iyer’s own devising. There are choices here from naan to orzo with chile-spiked eggplant.
